An entire book about sesame seeds? Indeed! From a leader in the world of tahini and halva comes this gorgeous cookbook filled with recipes and history that will expand your concept of the sesame seed and leave you hungry for sesame delicacies and for kitchen time to prepare its mouth-watering dishes. Through her own recipes, Simons weaves a story of her travels, her heritage, and her deep connection to the many people and places that use sesame in their cooking – from the Middle East to Asia, the Mediterranean to Africa. Sesame is a loving culinary tribute to the sesame seed: how it has transformed dishes, how it has been translated by different regional customs, and how it has tied people and places together through generations. Sesame offers readers fascinating historical background and more than eighty diverse recipes using sesame seeds, sesame oil, sesame paste (tahini) and halva, the fudge-like candy that means “sweet” in Arabic. Recipes include savory dips and dressings, entrees, salads and sweet and desserts of all kinds. Simons also brings her own multicultural upbringing to this story – her Jewish ancestors were expelled from their homes during the Spanish Inquisition, fled to Czechoslovakia, and, after surviving the Holocaust, left for Bulawayo, Zimbabwe. Simons grew up in Australia before her move to New York as an adult, when she went into the sesame business.
“My journey with sesame began when I started Seed + Mill, but it’s always been about more than just making tahini,” says Simon. “In Sesame, I wanted to explore how this tiny seed can transform both familiar and unexpected dishes. It’s a seed that connects cultures, flavors, and traditions, and I’m excited to share the ways sesame has inspired me.”
Rachel Simons is the founder of Seed + Mill, the first store devoted to sesame products in the United States. Seed + Mill has been featured in Forbes, The New York Times, Food 52, Bon Appetit, and more.
