Come for a feast, friendship, and discussion – of the ups and downs of preparing your selected dish and of the this fascinating and engaging book. For their first major books since the trailblazing and James Beard award-winning Zahav, Michael Solomonov and Steven Cook go straight to the food of the Israeli people – the great dishes that are the soul of Israeli cuisine. Usually served from tiny eateries, hole-in-the-wall restaurants, or market stalls, these specialities have passed from generation to generation. To find the best versions, the authors scoured bustling cities like Tel Aviv, Jerusalem, and Haifa, as well as sleepy town on mountaintops and in the desert. Their finds include meals in the hand like falafel and pita, juicy, grilled and roasted spice-rubbed meats: stuffed vegetables; and a wealth of chopped vegetable salads; and desserts like tahini-based shakes and ice cream. Every recipe is tailored for home cooking, and each chapter weaves history with contemporary portrayals of the food and those who grow and prepare it. Striking photographs capture the color and vitality of the food.
